مواد لازم برای شیرینی نخود چی بدون فر

آرد نخود چی ( الک شده ) : 170 گرم یا یک لیوان و نیم سرخالی

پودر قند ( الک شده ) :75 گرم یا نصف لیوان

پودر هل یک چهارم قاشق چای خوری

روغن صاف قنادی یا روغن کاملأ جامد 85 گرم یا یک سوم لیوان

چند نکته اگه رعایت کنید این شیرینتون عالی میشه و میتونید کلی هم سفارش بگیرید:

نکته اول : برای اینکه شیرینی طعم و عطر بهتری و ماندگاری بالایی داشته باشه از روغن کاملأ جامد استفاده کنید .

نکته دوم : اگه می خواهید شیرینی انسجام بیشتری داشته باشه سه قاشق از مقدار آرد نخودچی بردارید و بجاش سه قاشق آرد سفید قنادی استفاده کنید .

نکته سوم اگه خمیرتون جمع نشد یک قاشق روغن مایع اضافه کنید نه بیشتر.

طرز تهیه نخودچی

مرحله اول

ابتدا روغن به همراه پودر قند با قاشق با هم مخلوط می کنیم ، وقتی که پودرقند به خورد روغن رفت؛باهمزن برقی به مدت 5 دقیقه هم می زنیم وقتی که به رنگ روشن درآمد و حالت پفکی شد ؛پودرهل را اضافه می کنیم . مجددأ 30 ثانیه با همزن می زنیم تا خوب مخلوط شود.

مرحله دوم

آرد نخودچی طی چند مرحله به مواد اضافه می کنیم و با قاشق هم می زنیم تا کاملأ مخلوط و یکدست شود . در این مرحله می توان از خمیرگیر همزن استفاده کرد و خمیر را جمع کرد یا با دست خوب ورز می دهیم تا خمیر جمع شود و انسجام پیدا کند . ( توجه داشته باشید حتمأ با سرانگشت ورز دهیدتاخمیر به روغن نیافتد .) خمیر را جمع می کنیم و داخل نایلون می گذاریم به مدت 3 ساعت در دمای محیط به خمیر استراحت می دهیم.

مرحله سوم

تابه ای رو برمی داریم،کف تابه را یک پایه یا رینگ می گذاریم تا ظرف با کف تابه تماس پیدا نکند ؛ باحرارت خیلی کم می گذاریم تا گرم شود به مدت 15 دقیقه ، درآن را هم می بندیم .

سینی برمی داریم که سایزش با تابه ای که داریم مناسب باشد و بتوان درون تابه قرار داد ، کف سینی را کاغذ روغنی پهن می کنیم .

مرحله چهارم

الان خمیر آماده قالب زدن می باشد . یک کاغذ روغنی را رویه خمیر می گذاریم و با وردنه رویه آن می کشیم تا خمیر باز شود ؛ تاجایی که می خواهیم ارتفاع داشته باشد باز می کنیم و بوسیله قالب های مخصوص نخود چی؛ قالب زده و ابزار فوندانت خمیر را از قالب جدا می کنیم و درون سینی می چینیم . روی شیرینیها رو به دلخواه می توان تزیین کرد . بعد سینی را درون تابه ای که از قبل گرم شده به مدت 20 دقیقه باحرارت بسیار کم می گذاریم .

شیرینی های ما آماده شده و می گذاریم تا نخودچی ها کاملأ سرد شود . نکته : (نخودچی گرم زود ازهم می پاشد و خورد می شود. )

اگرمی خواهید از فر استفاده کنید درطبقه وسط فری که از یک ربع قبل گرم شده بمدت 20 دقیقه در دمای 155 درجه فربرقی و 175 درجه فرگازی قراردهید .
