شیرینی ناپلئونی با خمیر هزارلا
شیرینی ناپلئونی یکی از انواع شیرینی های تَر خوشمزه و پرطرفدار ایرانی است ، شیرینی ناپلئونی از خمیری با نام خمیر هزارلا که مبدأ اصلی فرانسوی دارد درست می شود . به طور سنتی در بین لایه های آن از خامه زده شده و سطح بالایی آن را با پودر قند می پوشانند . شیرینی ناپلئونی می تواند گزینه خوبی برای شب یلدا باشد . در این مطلب از سایت پرهام فود به طرز تهیه شیرینی ناپلئونی در سه مدل مجلسی پرداخته ایم .
مواد لازم برای تهیه شیرینی ناپلئونی

نکته : اگر می خواهید مدل قیفی درست کنید بهتره یه مقدار قالب قیف ها رو چرب کنید و اگر قیف هم ندارید با فویل ضخیم خیلی راحت می توانید قیف درست کنید .
طرز تهیه شیرینی ناپلئونی
مرحله اول
خمیر ها را داخل سینی فر که از قبل کاغذ روغنی درون آن پهن کردیم باز می کنیم ؛ و از جهت طولی ، برش های یک سانتی ایجاد می کنیم . برای اینکه بتوانیم به دور قالب قیفی بپیچیم ، هر تعداد که دوست دارین برش های یک سانتی ایجاد کنید بعد بوسیله قیف ( اگر قیف نداشتید می توانید فویل را به شکل قیف در آورید. ) خمیر را دور قیف می پیچیم طوری بپیچید که لایه ها روی هم قرار بگیرند .
[ زیرا اگر از هم فاصله داشته باشند ، موقع پخت از هم جدا می شوند. ] تا انتها که رول کردید ، انتهای خمیرتان را به خمیر بالایی بچسپانید و بالای خمیر هم بگیرید تا موقعی که از خامه پر می کنید از آن خارج نشود . حتماً انتهای رول را خوب به خمیر بالایی بچسپانید .
خمیر را برش های مستطیل شکل می دهیم یکی را بعنوان الگو قرار می دهیم و همه را به همان اندازه برش می دهیم تا همه یک سایز باشند . بزرگی و کوچکی مستطیل به سلیقه خودتان بستگی دارد . داخل سینی فر که قبلاً کاغذ نسوز ( روغنی ) انداختیم ؛ برش ها را با فاصله قرار می دهیم و مابقی خمیر ها را به شکل گل برش می زنیم و درون سینی فر می چینیم و فر هم از قبل گرم می کنیم .
مرحله دوم
فر گازی روی دمای 180 درجه و فر برقی روی دمای 160 درجه تنظیم می کنیم . به مدت 25 دقیقه داخل فر می گذاریم . خمیر نان های قیفی هم به صورت خوابیده و یا ایستاده درون سینی فر گذاشته تا زمانی که پخته و طلایی شوند . وقتی از فر خارج کردیم و سرد شد می توان راحت از قیف خارج کرد .
مرحله سوم
خمیر ها پف کرده و طلایی شده ، را برداشته قسمتهایی که پف کرده را با چاقو اره ای می گیریم و پودر ها را برای شیرینی لازم داریم . شیرینی ها را از وسط به دو قسمت کرده که بتوان خامه رویشان قرار دهیم . پشت شیرینی هم اگر دیدیم پف کرده و اضافه داشت با چاقو می گیریم .
حالا این اضافات را با دستمان به صورت پودری در آورده و انتهای کار شیرینی ها را باهاشون پوشش می دهیم .
مرحله چهارم
شیرینی ها را از سه قسمت استفاده می کنیم و هر لایه خامه فرم گرفته می زنیم و لایه بعد را روی آن قرار می دهیم تا انتهای کار همین روش استفاده می کنیم ؛ می توانید از دو لایه هم استفاده کنید ؛ چون می خواهیم شیرینی هایمان ارتفاع داشته باشد از سه لایه استفاده می کنیم .
خامه می کشیم و روی همدیگر قرار می دهیم در نهایت روی شیرینی ها خامه قنادی می کشیم و با پالت صاف می کنیم و دور تا دور شیرینی ها خامه ای که روی پالت مونده می کشیم و درون پودر ها می غلطانیم تا کاملا پوشش داشته باشد .
برای مدل گل هم ، روی کار اضافات را به وسیله ی چاقو تراشیدیم و بعد به دو قسمت تقسیم کردیم وسط آن را خامه فرم گرفته می زنیم ، خامه را روی هر پر گل پایپ می کنیم و لایه بعدی را روی آن قرار می دهیم و مقداری خامه را وسط گل پایپ می کنیم و با پودر پسته و پودر گل نسترن که داریم روی آن میریزیم و تزیین میکنیم .
مرحله آخر
و در نهایت با پودر قند روی شیرینی ها الک می کنیم و با پودر پسته تزیین می کنیم تا خوشکل تر و خوشمزه تر شود . برای مدل قیفی هم خامه ی فرم گرفته شده پر می کنیم و با مقداری از خامه که بیرون زده را داخل پودر پسته زده و به این صورت تزییین می کنیم .
